This week being the week of Thanksgiving I am foregoing my typical Menu Monday and just going to share a few of our favorite holiday recipes. My family will be doing a lot of cooking and eating a lot of simple meals leading up to the holiday. So, my menu is pretty bland this week.
Here are two of our favorite side dishes at Thanksgiving that are simple and yummy!
Corn Casserole:
1 can cream style corn
1 can whole kernel corn
8 ounces sour cream
2 pkgs Jiffy Brand Corn Muffin Mix
3 eggs
2 Tablespoons vegetable oil
Simply mix all ingredients together, pour into per-greased 9"x13" baking dish and bake at 350 degrees until golden brown on top and toothpick inserted in center comes out clean.
Fluff:
1 package pistachio pudding mix
1 can mandarin oranges (drained)
1 can crushed pineapple (drained)
16 oz. Cottage Cheese
1 small tub Cool Whip
Mix together adding cool whip last. Serve chilled.
