Place warm water,sugar, and yeast in the bowl of your stand mixer and allow it to sit for about 5 minutes, yeast will become foamy.
With the paddle attachment on your mixer add flours, salt, and olive oil until dough begins to pull away from sides, and the texture is smooth-you may need to add a bit more flour.
Flip dough onto a floured surface and knead a few times. Divide dough into 8-10 balls.
Roll each to ⅛th" thickness, spread sauce over dough, and cover half with your choice of toppings, leaving a ¼" edged all around. Fold in half and use a fork to crimp and seal edges. Poke 1-2 air vents on top. Place on baking sheet.
Bake for 16-18 minutes until they begin to turn golden brown.
