Homemade Whole Wheat Pizza Pockets

Ingredients
  • 1½ cups whole wheat flour
  • 1½ cups all-purpose flour
  • 1 pack active dry yeast
  • 1 cup very warm water
  • 2 tsp. sugar
  • 1 tsp. salt
  • 1 Tbsp. olive oil
Instructions
  1. Preheat oven to 35o degrees.
  2. Place warm water,sugar, and yeast in the bowl of your stand mixer and allow it to sit for about 5 minutes, yeast will become foamy.
  3. With the paddle attachment on your mixer add flours, salt, and olive oil until dough begins to pull away from sides, and the texture is smooth-you may need to add a bit more flour.
  4. Flip dough onto a floured surface and knead a few times. Divide dough into 8-10 balls.
  5. Roll each to ⅛th" thickness, spread sauce over dough, and cover half with your choice of toppings, leaving a ¼" edged all around. Fold in half and use a fork to crimp and seal edges. Poke 1-2 air vents on top. Place on baking sheet.
  6. Bake for 16-18 minutes until they begin to turn golden brown.
