Chewy Italian Pistachio Cookie Recipe

Ingredients
  • 1 cup Pistachio Flour
  • 1 cup Almond Flour
  • ½ Cup Granulated Sugar
  • 2 Egg Whites
  • ¼ Cup Pistachios, chopped
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together in large bowl. Dough will come together and be moist with chunks of nuts.
  3. Form into 1"-2" balls and place 2"-3" apart on lined baking sheet.
  4. Flatten slightly to help cook evenly.
  5. Bake for 12-15 minutes at 350 degrees.
  6. Remove from oven, and transfer immediately to cooling racks.
