<g class="gr_ gr_2857 gr-alert gr_spell gr_run_anim ContextualSpelling multiReplace" id="2857" data-gr-id="2857">Sugar Free</g> Chocolate Cupcakes

  • 1 Sugar-Free Chocolate Cake Mix
  • 1 cup Pumpkin Puree
  • 1 cup Water
  • 1 8oz. container Sugar-Free Whipped Topping
  • 1 package Sugar-Free Fat-Free Chocolate Pudding Mix
  1. Pre-heat oven to 350 degrees.
  2. Spray muffin tin or silicone muffin pan with nonstick spray or line with cupcake liners and set aside.
  3. In a large bowl (I use my medium Tupperware® Thatsa Bowl), mix together cake mix, pumpkin, and water until well blended.
  4. Pour into prepared muffin tins. I use a ¼ cup measuring cup to do this, or you can use an ice cream scoop or spoon. I try to fill them around ½ full as they will expand and rise when cooking.
  5. Place in oven and bake for 12-15 minutes or until a toothpick inserted in the middle of cupcakes come out clean.
  6. Remove from oven and place on cooling racks to cool before icing.
  7. While the cupcakes are cooling, mix the powder sugar-free pudding mix into the whipped topping until well combined. This will thicken the topping and make it easy to pipe or spread onto the cake.
