Chicken Taco Soup Recipe

      - 2 Cups Shredded or Cubed Chicken
- 1 onion, diced
- 1 bell pepper, diced
- 1 poblano pepper, diced
- 2 tomatoes, chopped
- 1 tablespoon garlic, minced
- 6 cups fat free chicken broth
- 1 cup tomato sauce
- 1½ cups kidney beans or pinto beans
- 2 tablespoons taco/fajita seasoning
- 1 tablespoon olive oil
     - In a large stockpot, saute the onion, bell pepper, poblano pepper, and tomato for 5 minutes stirring regularly. You want the vegetables to be tender.
- Mix in chicken, broth, tomato sauce, garlic, pinto beans, and seasonings.
- Simmer on medium heat for 30 minutes, stirring occasionally.
- Serve with preferred garnishes like cheese, sour cream, or tortilla chips.
