Chicken Taco Soup Recipe

Ingredients
  • 2 Cups Shredded or Cubed Chicken
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 poblano pepper, diced
  • 2 tomatoes, chopped
  • 1 tablespoon garlic, minced
  • 6 cups fat free chicken broth
  • 1 cup tomato sauce
  • 1½ cups kidney beans or pinto beans
  • 2 tablespoons taco/fajita seasoning
  • 1 tablespoon olive oil
Instructions
  1. In a large stockpot, saute the onion, bell pepper, poblano pepper, and tomato for 5 minutes stirring regularly. You want the vegetables to be tender.
  2. Mix in chicken, broth, tomato sauce, garlic, pinto beans, and seasonings.
  3. Simmer on medium heat for 30 minutes, stirring occasionally.
  4. Serve with preferred garnishes like cheese, sour cream, or tortilla chips.
