Best Pot Roast Recipe for Instant Pot

Makes 8 Servings Each serving is approximately 5 ounces beef roast, 2 small potatoes, and ½ cup carrots 7 SmartPoints per serving on Weight Watchers FreeStyle, Flex, Your Way Plans 8 Points Plus per serving
  • 3 pound chuck roast, trimmed
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon seasoned salt
  • 1 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2 cups baby carrots
  • 8 small potatoes (new potatoes)
  • ½ cup red wine
  • ½ cup beef broth
  1. In a small bowl, mix together the garlic powder, onion powder, seasoned salt, and black pepper.
  2. Liberally sprinkle all sides of the roast with the seasoning blend.
  3. Place roast in bottom of Instant Pot liner.
  4. Add in minced garlic.
  5. Pour in the red wine and beef broth.
  6. Top with chopped onion and red pepper.
  7. Add carrots and potatoes on top of onion.
  8. Place lid and set to seal.
  9. Choose Meat and set to 55 minutes.
  10. Allow to cook, and NPR (natural pressure release) for 15 minutes.
  11. Remove from Instant Pot and shred to serve.
