Black Bean and Corn Salad with Avocado

- 1 can black beans, rinsed and drained
- 1 10oz package frozen corn
- 1 large tomato, diced
- 1 large cucumber, diced
- 1 bunch cilantro, chopped
- 1 ripe medium avocado, diced
- 1 clove garlic, minced
- Juice of 1 large lime
- ¼ cup balsamic vinegar
- 1 teaspoon cumin
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- In a small bowl, mix together the balsamic vinegar, cumin, salt, and pepper. Set aside.
- Rinse canned black beans well.
- Pour black beans, corn, avocado, tomato, cucumber, cilantro into a large bowl.
- Pour in lemon juice, the balsamic vinegar and seasoning mixture, minced garlic, and olive oil.
- Mix well until all vegetables coated and evenly mixed.
- Serve over a bed of lettuce or with chips for dipping.
