Easy Chopped Salad Recipe to Pair with Pot Pies

Ingredients
  • 1 cup chopped iceberg lettuce
  • 1 cup chopped spinach
  • 1 cup chopped mixed baby greens
  • 1 cucumber chopped2 stalks celery, chopped
  • 1 carrot, shredded or chopped fine
  • 1 cup broccoli, chopped
  • 1 roma tomato, chopped
  • ½ cup pecans, chopped
  • ½ cup edamame
  • ½ cup blueberries
  • Ingredients for Balsamic Dressing:
  • ¼ cup balsamic vinegar
  • ⅛ cup olive oil
  • 1 tablespoon sesame oil
  • 2 teaspoon miso paste
  • 1 teaspoon blackstrap molasses
  • 1 tablespoon roasted sesame seeds
Instructions
  1. Prepare all salad ingredients by chopping into similar sizes (approximately ¼-1/2" cubes if possible)
  2. Set aside in large bowl
  3. In salad shaker or blender, mix together ingredients for balsamic dressing (vinegar, oils, miso paste, molasses, and sesame seeds)
  4. Shake or blend until well combined.
  5. Pour over chopped salad and mix until well coated.
