Buffalo Chicken Pasta

Makes 8 Servings Each serving is 1½ cups 7 SmartPoints per serving
  • 2 cups shredded or cubed chicken
  • 1 box penne pasta (12 oz)
  • 8 ounces fat-free cream cheese
  • ⅓-1/2 cup Frank's Hot Sauce (this is to taste if you prefer hotter or not)
  • 1 package Ranch Seasoning Mix
  • ½ cup fat-free sour cream
  • 1 cup fat-free cheddar cheese, divided
  1. Preheat oven to 375 degrees.
  2. Cook pasta according to package, drain and set aside
  3. Spray a large casserole dish (9x13) with nonstick spray
  4. Mix drained pasta with chicken, cream cheese, Frank's sauce, ranch mix, sour cream, and ½ cup cheese until well blended. Note: If it seems too dry, you may add a bit of water or chicken stock if desired.
  5. Pour into the dish and spread evenly.
  6. Top with remaining cheese
  7. Bake for 18-20 minutes or until heated through and cheese has melted.
