Vegan Black Bean Brownies

Ingredients
  • 1½ cups black beans
  • ¼ cup blackstrap molasses
  • ¼ cup unsweetened applesauce
  • ⅓ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
Instructions
  1. Preheat oven to 375 degrees
  2. Spray an 8x8 casserole dish with non-stick spray
  3. Drain and rinse the black beans, then pour into a blender or food processor and pulse until mostly smooth
  4. Dump black beans in a large bowl along with applesauce and molasses.
  5. Sift in cocoa powder, flour, salt, and baking powder and stir until well combined.
  6. Pour into prepared casserole dish and bake at 375 degrees for 35 minutes or until cooked through and a toothpick inserted in the center comes out clean.
