Lentil Vegan Sloppy Joes

Ingredients
  • 1 cup dry green lentils
  • 2 cups water
  • ½ yellow onion, diced fine
  • 1 green bell pepper, diced fine
  • ½ cup carrots, shredded
  • 2 cups no-sugar-added tomato sauce
  • 1 tablespoon brown sugar
  • 2 tablespoons Vegan Worcestershire Sauce (I prefer Annie's Vegan options but you can substitute any preferred brand)
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon ground cumin
  • ¼ teaspoon chili powder
  • 4 Light Hamburger Buns (2 SP each
Instructions
  1. In a large saucepan, add all ingredients and stir until mixed well.
  2. Bring to a boil, stir, then cover and reduce to a simmer.
  3. Simmer for 20-25 minutes stirring occasionally to prevent sticking.
  4. Lentils will be tender but still, have some texture.
  5. Serve ½ cup mixture on each bun.
