Slow Cooker Chicken Pasta with Broccoli

  • 1 pound boneless skinless chicken breasts
  • 1 cup fat-free chicken broth
  • 1 can 98% fat-free cream of chicken soup
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 12-ounces angel hair pasta
  • ½ cup nonfat plain Greek yogurt
  • 1 cup low-fat part-skim mozzarella cheese, shredded
  • ⅓ cup grated parmesan cheese
  • 3 cups broccoli florets
  1. Spray your slow cooker with nonstick spray or line with a slow cooker liner
  2. Place boneless skinless chicken breasts on bottom of slow cooker and sprinkle salt, pepper, and garlic powder over tops
  3. Pour chicken broth and cream of chicken soups over chicken
  4. Cook for 4 hours on low
  5. Remove lid and shred the chicken with forks or a mixer
  6. Break up the uncooked angel hair into smaller pieces (I usually break in half), and mix them along with the broccoli, nonfat plain Greek yogurt, mozzarella, and parmesan cheese in with the chicken mixture.  If the mixture seems too dry, you may add additional ½ cup water as needed.
  7. Cook for an additional 30 minutes.  Test pasta for doneness at this time.  If not cooked through, continue to cook for additional 15-30 minutes (will vary depending on slow cooker).
  8. Remove the lid, stir well to combine and serve.
  9. May add additional salt and pepper as needed.
