  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ cup fat-free chicken broth
  • 1 red bell pepper, sliced and cubed
  • 1 can, 20 ounces, pineapple chunks in water (do not drain)
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • ¼ cup white vinegar
  • 2 tablespoons cornstarch, dissolved in 2 tablespoons cold water
  • Green onions, for garnish
  1. Place ½ cup chicken broth into a large skillet and set aside.
  2. In a large bowl, add turkey, breadcrumbs, onion, salt, and pepper and mix well. Add in the egg and mix well until all ingredients are incorporated.
  3. Use a tablespoon scoop to shape meat into meatballs. Place meatballs into prepared pan.
  4. Heat pan over medium-high heat to cook meatballs for 3-4 minutes on each side. When cooked through, remove from pan and set aside.
