Skinny Chocolate Chip Muffins

Ingredients
  • 2 cups all-purpose flour
  • ⅓ cup granulated white sugar
  • ½ teaspoon salt
  • 1 tablespoon baking powder
  • 1 cup unsweetened vanilla almond milk
  • ¼ cup unsweetened applesauce
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup mini chocolate chips
Instructions
  1. Preheat oven to 425 degrees
  2. Line mini muffin tin with liners or spray with non-stick spray
  3. In a large bowl, blend together the flour, sugar, salt, and baking powder.
  4. In a medium bowl, mix together the almond milk, applesauce, eggs, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and blend until just incorporated. You want all dry ingredients to be wet, but don't over blend or you will have a heavy/dense muffin.
  6. Fill each muffin tin ¾ way full and top with approximately 7-10 mini chocolate chips.
  7. Bake at 425 degrees for 7-10 minutes or until a toothpick inserted in the center comes out clean.
