Healthy Veggie Relish for Summer Barbecues

Makes 6 servings Zero Weight Watchers Points if sugar is omitted and sugar substitute is used)
Ingredients
  • ½ cup diced tomato
  • ½ cup diced zucchini
  • ½ cup diced green pepper
  • ¼ cup diced white onion
  • 1 teaspoon sugar (or sugar substitute if on WW)
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon thyme
  • 1 tablespoon vinegar
Instructions
  1. Mix tomato, zucchini, green pepper and onion in a bowl.
  2. Add seasonings and mix well.
  3. Stir in vinegar.
  4. Let relish sit overnight, covered in the refrigerator so flavors mingle.
  5. Stir well before serving over brats.
  6. Serves 6
