Weight Watchers Deviled Eggs Recipe

  • 6 large eggs
  • 3 tablespoons light mayonnaise
  • 1 tablespoon mustard
  • salt and pepper to taste (around ¼ teaspoon each typically)
  1. Place the eggs and Eggsact Eggtimer into a medium saucepan and cover with water, making sure the water is at least 1" above the eggs.
  2. Cook on medium-high heat bringing to a boil. Boil for 15 minutes or until the egg timer shows the eggs are hard by changing color.
  3. Drain immediately and wash the eggs in cold water.
  4. Add ice to the water to cool the eggs faster.
  5. Remove the eggs from the water and refrigerate until ready to use.
  6. When ready to use, peel eggs and discard shells.
  7. Slice eggs in half and place yolks in a small bowl. Mash yolks well with a fork.
  8. Add mayonnaise, mustard and mix well. Season with salt and pepper.
  9. Place mixture into a re-sealable plastic bag, snip the tip and pipe into empty eggs.
  10. Serve immediately or refrigerate, covered until ready to serve.
