Slow Cooker Greek Chicken

  • 1 pound boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Juice of 2 lemons
  1. In a small bowl, mix together olive oil, garlic, rosemary, thyme, oregano, and lemon juice.
  2. Place chicken breasts in an even layer on the bottom of the slow cooker.
  3. Pour the spice mixture over the top of the chicken.
  4. Cook on high for 3 hours.
  5. Shred chicken and leave cooking on low for an additional hour.
  6. Serve in a pita, on salads, or with rice and vegetables.
