BBQ Chicken English Muffin Pizzas

- 4 Bay's English Muffins, split and untoasted
- ¾ cup barbecue sauce (I use sugar-free to suit my diabetic needs)
- 1 cup shredded cooked chicken breast (I use rotisserie chicken when in a hurry)
- ⅓ cup shredded smoked gouda cheese
- ⅓ cup shredded mozzarella cheese
- 1 tablespoon finely chopped red onion
- 1 tablespoon chopped cilantro
- Preheat your oven to 400°F
- Mix chicken breast and barbecue sauce in a medium bowl and set aside
- Mix cheeses together in a small bowl and set aside
- Place the Bay's English Muffin halves on a baking sheet
- Top evenly with chicken mixture, and then sprinkle the tops with onion and cheese
- Bake at 400°F for 12-14 minutes or until the cheese is melted and lightly browned.
- Sprinkle with cilantro before serving.
