Instant Pot Creamy Chicken Tortilla Soup

  • 2 cups shredded chicken breast
  • 2¼ cups Green Enchilada Sauce
  • 4 Cups Chicken Broth
  • 2 cans Pinto Beans
  • 3 Mission Thin Corn Tortillas, sliced into 1" pieces
  • 1½ cup Salsa
  • ½ Cup Sour Cream
  • Optional Additions: 1 cup frozen corn or 1 cup black beans
  • Toppings: Shredded Cheese, Cilantro, Sour Cream
  1. Place Instant Pot liner into Instant Pot
  2. Place chicken, enchilada sauce, broth, pinto beans, tortillas, and salsa into Instant Pot Liner and mix well.
  3. Place lid on Instant Pot and set to seal.
  4. Cook on manual for 5 minutes.
  5. When done cooking, quick release pressure.
  6. Stir in sour cream and serve with toppings of your choice.
