Healthy Banana Cake Recipe

Ingredients
  • ⅔ cup shortening (you can replace with butter or margarine, but points change)
  • 1 cup Swerve granulated sweetener
  • 2 eggs
  • 1 cup mashed ripe bananas, usually 2-3 bananas
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ cup low-fat buttermilk
  • Ingredients for Cream Cheese Frosting
  • 2 SmartPoints per serving when divided by 16
  • 4 ounces light cream cheese, softened
  • ¼ cup butter, softened
  • 2 teaspoons vanilla extract
  • 1 cup Swerve confectioners sweetener
Instructions
  1. Preheat oven to 325 degrees (dark pan) or 350 degrees (glass pan).
  2. Spray cake pan/casserole with nonstick cooking spray and set aside
  3. With a mixer, cream shortening and Swerve sweetener together until fluffy (approximately 3 minutes).
  4. Add eggs, bananas, and vanilla extract to the mixture and beat well.
  5. In a small bowl, combine the all-purpose flour and baking soda mixing well.
  6. Add flour and buttermilk to the liquid mixture and beat until just combined.
  7. Pour into a prepared cake pan.
  8. Bake for 20-35 minutes depending on pan choice (dark pan for 25-35 minutes, glass pan for 20-30 minutes). Check with a toothpick in the center to see if done completely.
  9. Remove from the oven and allow to cool completely.
  10. If adding cream cheese frosting, follow directions below:
  11. Add cream cheese, butter, and vanilla to a mixer and beat well until smooth. Slowly mix in the Swerve confectioners sugar until combined. Increase the speed and whip until you have a frosting consistency you prefer. Usually 2-3 minutes. You may add a bit of water or more confectioners sugar as needed to get the texture you prefer.
  12. Place icing in a piping bag and pipe in small amounts onto each square of the cake prior to serving.
