Sweet Potato Salad Recipe

Ingredients
  • 24 ounces sweet potatoes (approximately 3 large)
  • 4 slices center cut bacon, cut into small pieces
  • ½ cup raisins
  • ¼ cup chopped walnuts
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • 1 tablespoon granulated sugar
  • 1 tablespoon olive oil
Instructions
  1. Peel, slice, and cut sweet potatoes into ½" pieces.
  2. Place sweet potato cubes into a stockpot with water, making sure the water is at least 1" above the potatoes
  3. Heat over medium-high heat until boiling. Once boiling, reduce heat to medium and continue to boil 8-10 minutes or until sweet potatoes are soft and tender.
  4. Drain and rinse with cold water. Set aside.
  5. In a large skillet, place bacon pieces and cook over medium heat stirring frequently.
  6. Add cinnamon, ginger, and sugar into the skillet with bacon, and mix well. Stir in raisins and cook for 1-2 minutes, just heating through.
  7. Stir in the potatoes and walnuts, and mix well.
  8. Serve immediately, or refrigerate in an airtight container.
  9. Toss salad to distribute flavors if serving salad cold.
