Mixed Berry Baked Oatmeal Recipe

  • 2 cups rolled oats
  • ¼ cup unpacked brown sugar
  • 1 teaspoon baking soda
  • 1 cup unsweetened almond milk
  • ½ teaspoon ground cinnamon
  • 1 egg
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups frozen mixed berries
  1. Preheat oven to 350 degrees
  2. Spray the bottom of an 8"x8" pan with non-stick cooking spray.
  3. In a large bowl, mix together oats, brown sugar, cinnamon, baking soda, and salt until well combined.
  4. Add in almond milk, egg, and vanilla extract and blend until oats are wet and ingredients well incorporated.
  5. Spread 2 cups frozen mixed berries across the bottom of the baking dish.
  6. Top the berries with the oatmeal mixture.
  7. Bake for 30-35 minutes at 350 degrees or until the top is golden brown and berries are bubbling.
