Classic Chicken Piccata Recipe

  • 4 thin sliced chicken breasts
  • ¼ cup flour
  • ¼ teaspoon salt
  • 4 tablespoons butter, divided
  • 2 tablespoons olive oil
  • ½ cup chicken broth
  • ⅓ cup lemon juice
  • ¼ cup capers, rinsed
  • Pinch of black pepper
  1. Add 2 tablespoons butter and 2 tablespoons oil to a skillet and heat.
  2. Dip chicken into flour, coating both sides.
  3. Place into skillet and season with salt and pepper.
  4. Heat 2-3 minutes each side until chicken is browned.
  5. Remove from pan and set aside.
  6. Add broth, lemon juice, capers and remaining 2 tablespoons butter to pan and heat on medium heat until bubbly, stirring frequently.
  7. Reduce heat and simmer for 5 minutes, continuing to stir, as the mixture begins to thicken.
  8. Return chicken to pan and heat for an additional 2-3 minutes per side or until chicken is heated through.
  9. Serve chicken topped with sauce.
To lower points on the WW FreeStyle Pan, use less oil and butter, and extra chicken broth. This creates a sauce that has less richness, but still delicious flavor.
