Strawberry Fruit Ice Cream Low Calorie Recipe

Serves: 18
- 1 pound frozen strawberries
- ½ container light whipped topping
- 1 cup half and half
- ⅛ cup zero-calorie sugar substitute (I used Stevia)
- Allow strawberries to thaw for 30 minutes on the counter– not completely thawed, but slightly soft.
- Place into a blender along with the half and half and pulse until strawberries are mostly blended.
- This will be thick.
- Pour into a bowl, and fold in the whipped topping and your choice of zero-calorie sugar substitute.
- Spoon equally into 18 waiting cupcake liners.
- Freeze for 2 hours before serving.
