Strawberry Fruit Ice Cream Low Calorie Recipe

  • 1 pound frozen strawberries
  • ½ container light whipped topping
  • 1 cup half and half
  • ⅛ cup zero-calorie sugar substitute (I used Stevia)
  1. Allow strawberries to thaw for 30 minutes on the counter– not completely thawed, but slightly soft.
  2. Place into a blender along with the half and half and pulse until strawberries are mostly blended.
  3. This will be thick.
  4. Pour into a bowl, and fold in the whipped topping and your choice of zero-calorie sugar substitute.
  5. Spoon equally into 18 waiting cupcake liners.
  6. Freeze for 2 hours before serving.
