Slow Cooker Pork Chops

Ingredients
  • 4 5-ounce pork chops, about 1 inch thick, fat removed
  • 3 cloves minced garlic
  • ¼ C low-sodium soy sauce
  • ¼ C low-sodium chicken broth
  • 2 tbsp packed, light brown sugar
  • ¼ tsp red pepper flakes
  • 1 tbsp instant tapioca
  • Salt and pepper
  • Low-fat cooking spray
  • 1 C uncooked Minute Rice
  • 1 C low-sodium chicken broth
Instructions
  1. Coat a large skillet with low-fat cooking spray.
  2. Season pork chops with salt and pepper, and brown the pork chops over medium heat for a minute or two on each side, or until meat has a golden color. Reserve the drippings in the skillet.
  3. Place pork chops in slow cooker.
  4. Add garlic to drippings, stirring constantly on medium-low heat until garlic is golden but not brown. Stir in soy sauce, chicken broth, brown sugar, and red pepper flakes. Continue stirring constantly until the sugar is completely dissolved. Add the tapioca.
  5. Pour liquid mixture on top of pork chops. Cover, and cook on low for four to six hours, or until you can pull the meat apart with a fork.
  6. Serve with white rice seasoned with low-fat chicken broth.
