Rustic Chicken Cacciatore

Ingredients
  • 1 Pound Chicken Legs
  • 1 Cup Flour
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon Olive Oil
  • 1 tablespoon Coconut Oil
  • 3 Carrots, cut into ½" pieces
  • 3 Stalks Celery, cut into ½" pieces
  • 1 Yellow Onion, Chopped
  • 1 Green Bell Pepper, Chopped
  • 1 Bunch Fresh Basil chopped
  • 2 Cans Fire Roasted Diced Tomatoes
  • 1 Large Can Tomato Sauce
  • 1 package pasta of choice
Instructions
  1. Heat olive oil and coconut oil in large stockpot
  2. Mix together flour, garlic powder, onion powder, salt and pepper in medium bowl
  3. Dredge chicken legs in flour mixture and add to oil.
  4. Cook 3-4 minutes on all sides rotating to brow and cook through
  5. Remove chicken from pan and drain on paper towels
  6. Reduce heat to medium and add in carrots, onion, bell pepper and celery.
  7. Cook on medium heat stirring occasionally until mostly tender.
  8. Add in canned tomatoes, sauce and fresh basil.
  9. Stir well and cook on low to medium heat for 15-20 minutes
  10. Add chicken back to sauce and cook on low for additional 5 minutes
