Creamy and Delicious Red Potato Salad

  • 10-12 medium sized red potatoes
  • ½ lb. cooked bacon, crumbled
  • 5 eggs
  • ½ cup plain Greek yogurt (or sour cream)
  • 1 cup Mayo
  • 1 tsp. garlic salt
  • 1 tsp. pepper
  • 1 tsp. onion flakes
  • 1½ tsp. dried parsley
  1. Scrub potatoes well, dice into quarters or cut again for a smaller texture.
  2. Wash eggs very well, place in pot with potatoes fully covered in water.
  3. Boil potatoes until tender but not falling apart, drain water.
  4. Place eggs in cold water for 5 minutes.
  5. Combine potatoes, bacon, yogurt, mayo, garlic salt, pepper, onion flakes and parsley in a large bowl and stir well to combine all ingredients completely.
  6. Peel and dice eggs, add to contents of bowl and mix well.
  7. Transfer to serving bowl and refrigerate for at least an hour before serving.
