Easy Lemon Cupcake Recipe

  • 2 cups sugar
  • 2 tablespoons lemon zest
  • 1 cup unsalted butter room temp
  • 4 large eggs room temp
  • 1 cup buttermilk
  • ¼ cup lemon juice
  • 3 cups all-purpose flour
  • 4 tsp baking powder
  • ½ tsp salt
  1. Preheat oven to 350
  2. Line either regular or mini sized cupcake tins.
  3. In a food processor, pulse lemon zest and sugar until well blended
  4. In a large mixing bowl, whisk the flour, baking powder and salt together.
  5. Place this to the side.
  6. In a separate mixing bowl, blend butter and your lemon sugar until well combined.
  7. Begin to add eggs, one at a time and beat until well mixed.
  8. Now add half of the flour mix to the butter mix and mix until just combined.
  9. Now add half of buttermilk and mix until just combined.
  10. Finally add remaining half of flour mixture, buttermilk and lemon juice.
  11. Mix until well combined
  12. Pour the batter into the cupcake tins ¾ of the way full
  13. Bake for 20-24 minutes until an inverted toothpick comes out clean free of cake batter
  14. Cool for 20 minutes in the cupcake pan
  15. Remove cake from pans and cool on wire racks.
