Easy Chicken Tikka Masala Recipe

Ingredients
  • 1 pound boneless skinless chicken breasts, cut into 1-2" pieces
  • 1 tablespoon coconut oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garam masala
  • 1 tablespoon curry powder
  • ½ teaspoon cumin
  • 2 teaspoons cardamom
  • 2 teaspoons ground coriander
  • 2 teaspoons ground ginger
  • 1 can garbanzo beans, drained and rinsed
  • 1 can diced roma tomatoes
  • 1 8oz can tomato paste
  • 1½ cups chicken stock
  • 1 cup coconut milk
  • 1 cup plain yogurt
Instructions
  1. In a small bowl, mix together all dry spices. Divide and set half aside.
  2. Sprinkle half of dry spices onto chicken pieces until well coated.
  3. Heat coconut oil in large stockpot, add chicken and cook for 5-6 minutes stirring occasionally.
  4. Add in remaining dry spices, garbanzo beans, roma tomatoes, tomato paste, chicken stock and coconut milk.
  5. Simmer on medium heat for 10 minutes.
  6. Reduce heat to low and stir in yogurt. Make sure to stir while pouring this in and mix well. Reducing heat prevents the yogurt from curdling in the heat.
  7. Simmer for additional 15 minutes.
  8. Serve over rice and with Naan
