Cilantro Lime Quinoa Side Dish
Serves: 4
  • 1 Cup Quinoa
  • 2 Cups Low Sodium Fat-Free Chicken Broth
  • Juice of 1 Lime
  • 2 Teaspoons Cumin
  • 1 Teaspoon Salt
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 Bunch Cilantro (remove from stem & tear apart)
  1. Rinse Quinoa in warm water to remove any residue. Drain.
  2. In a large stockpot, bring all ingredients except for cilantro to a boil.
  3. Reduce heat and cook on medium heat for 16-20 minutes stirring occasionally. The consistency of Quinoa will be soft but still chewy.
  4. Remove from heat and mix in cilantro.
  5. Cover and let stand for 5 minutes before serving.
