Prepare the chicken

Toss the chicken pieces in salt, pepper, 1 teaspoon ground ginger, and cornstarch then set it aside while you heat the skillet with sesame oil over medium heat. 

Cook The Chicken

Over medium heat, cook the chicken for 4 to 5 minutes.  Stir regularly so all chicken cooks until browned and mostly cooked through. 

Finish with Sauce

Add the garlic, soy sauce, brown sugar substitute, remaining ginger, and water then stir to coat the chicken.  Cook for another 4 to 5 minutes on low heat.  Serve with rice!
