Making a healthier version of kids favorites is easy with this recipe for crusted chicken nuggets featuring pretzels. You get that crispy texture that you want, but without all of the fat! I love adding the mustard to the liquid mix of this because it adds, even more, flavor to the chicken without a ton of calories.
To keep this chicken crunchy without deep frying, I recommend using a baking sheet and silicone baking mat to keep them from sticking while cooking.
Ingredients for Crusted Chicken Nuggets:
1 pound boneless skinless chicken breasts
1/2 cup all-purpose flour
20 Pretzel Sticks or Mini pretzels
1/4 cup spicy brown mustard
1/4 cup skim milk
1 tsp. garlic powder
1/2 tsp. black pepper
Directions for Crusted Chicken Nuggets:
Preheat oven to 400 degrees.
Put pretzels in a plastic zippered bag and seal. Crush with a rolling pin or glass. You can also chop in a food processor to desired texture.
In 3 shallow containers place the following ingredients:
- Whisked milk and mustard
- Crushed pretzel pieces
Cut chicken into small bite-sized pieces.
Dredge chicken in flour, then mustard mixture, and finally pretzel pieces.
Place on a lined baking sheet and bake for 20-23 minutes, until golden brown. We use a silicone baking mat for this.
These nuggets freeze well so it is easy to make a big batch and put them up for quick snacks, dinner, or school lunches.
