This Apple Pie Cookies Recipe is going to totally change your world!  Seriously, everyone needs a good fast and easy cookie recipe, and we've made that happen.  My friend Emilee whipped these up for her family, and they loved them.  This cake mix cookie recipe is a great idea to make as a last minute snack everyone loves.

This recipe uses a sugar-free cake mix to lower the points value for Weight Watchers.  If you aren't following Weight Watchers, you can easily use any yellow cake mix for this recipe.  I also used Gala apples, but you can easily add your favorite apple, or whatever you happen to have on hand at the moment.

I highly recommend investing in a silicone baking mat or two if you plan to make cookies often. Especially for these since I don't add any extra oil to the mix.  Using applesauce lowers the points value on Weight Watchers, but can make them stick.  The silicone baking mats are perfect for preventing burning or sticking and make cleanup super easy.  I have a couple of sets of the Amazon Basics Silicone Baking Mats.  They are my favorite for durability and price.

Ingredients for Apple Pie Cookies Recipe

1 box Sugar-Free Yellow Cake Mix

½ cup unsweetened applesauce

2 eggs

1 cup apple, diced

½ teaspoon cinnamon

Optional Glaze:

½ cup Splenda

½ cup Skim Milk

Directions for Apple Pie Cookies Recipe

Preheat oven to 375 degrees

Line a baking sheet with silicone baking mats or parchment paper.

In a large bowl, combine cake mix, applesauce, eggs, apple, and cinnamon until well mixed.

Scoop 1" balls onto baking sheet approximately 2" apart.  I like to use a small cookie scoop for this process.

Bake at 375 degrees for 10-12 minutes or until desired doneness.

If making the glaze, stir Splenda and milk together in small bowl and drizzle over cookies.
