One of the biggest challenges in our health journey is to create foods that taste rich and are satisfying. Rethinking what we put into our body has created a slightly smaller pantry since we are eliminating processed foods as much as possible. That craving for something flavorful and starchy has resulted in this simple recipe for Garlic Roasted Organic Purple Cauliflower And Cabbage. Not only is it a great side to any of your favorite lean meats, it is hearty enough you can serve it alone as a great stand alone meal. The simplicity of this recipe and the richness it brings forth are a surprising combination. While our family has transitioned to all organic fruits and vegetables it is not required to make this meal exceptional for your family. A great bonus is that the addition of purple cauliflower is a fun way to get your kids interested in a new food.
GARLIC ROASTED ORGANIC PURPLE CAULIFLOWER & CABBAGE
INGREDIENTS
1 Head Organic Purple Cauliflower
1 Small Organic Cabbage
1/4 Cup Bragg’s Liquid Amino’s (may use light soy sauce instead)
2 Cloves Garlic sliced thin
1 Tablespoon Olive Oil, divided
1 Teaspoon Kosher Salt
1 Teaspoon Fresh Cracked Black Pepper
DIRECTIONS
- Preheat oven to 400 degrees
- Wash cabbage and cauliflower well and remove outer leaves.
- Roughly chop cauliflower and cabbage into bite sized pieces.
- Line a baking sheet with aluminum foil
- Spread half of olive oil over foil and place cabbage, cauliflower and garlic slices across baking sheet.
- Drizzle the top with remaining olive oil and season lightly with salt and pepper.
- Mix together and spread out in single layer over baking sheet.
- Bake at 400 degrees for 12 minutes.
- Stir vegetables or use a spatula to turn vegetables over to allow the other side to roast.
- Cook at 400 degrees for additional 10 minutes.
- Turn oven on broil for 3-5 minutes or until tops of vegetables have reached brownness you prefer.
- Remove and enjoy.
