Thank you so much for this meal plan! I hope that you will do more in the future, as starting the WW program as a vegan feels a bit daunting! Your plan is very helpful. Just a note that the Blueberry Oatmeal Muffins are vegetarian rather than vegan as they contain egg.

Which Morningstar veggie sausage do you use? The only one I have found by them is vegetarian, as it has egg white.

I have found the vegan option at Meijer, but have also used Gardein brand.

I buy Gardein brand and to add a southern "sausage" flavor, I buy Breakfast Sausage Seasoning from The Spice House and sprinkle on top before cooking them in my air fryer. Very good.

Use unsweetened applesauce as a substitute for eggs

Reds old mill brand has the BEST vegan egg substitute powder- on Amazon or at Target. Not too expensive, and really hits the flavor well. Doesn't taste like cake (which applesauce makes it do). My absolute fave!

      Flax egg,
      1 Tbsp Ground Flaxseed Meal
      3 Tbsp Hot Water
      INSTRUCTIONS
Add the tablespoon of ground flaxseed to a bowl.
Add 3 tablespoons of hot water from the kettle (just boiled).
Allow to sit for a minute or two – using hot water makes the thickening process much faster, and it usually gets to the right (gloopy/gelatinous) consistency in only about one minute.
Use it in place of an egg in recipes, it’s not an exact science, but usually 1 for 1, so 1 flax egg replaces, 1 chicken egg in a recipe.
Of course – it won’t work for things like vegan meringues! You definitely can’t whip it (for that you need aquafaba!)
However, in cakes and quick breads and pancakes and biscuits, it works perfectly!

At one point the recipe showed using an egg substitute like a flax egg. 🙂 Easy to adapt!
