Sweet Potatoes are one of my all-time favorite foods.  This Sweet Potato Salad Recipe that my friend Kari from Craft Create Cook made for us, was absolutely amazing.  I have had tons of different sweet potato dishes over the years, but this one is definitely one of the best! A different spin on a potato side dish, this salad has just enough sweetness to satisfy while also being a savory dish.

Sweet Potato Salad Recipe

Kari said that this recipe for sweet potato salad is good both warm and cold.  Honestly, when I made it, we didn't have any leftovers so I have only had it warm.  It was fantastic, and I can only imagine it would be just as good cold.

When cooking sweet potatoes, I always weigh them instead of just using a measurement of  3 large sweet potatoes. I do this because sizes differ so greatly, and SmartPoints are calculated on sweet potatoes according to the weight.  This recipe is calculated for 24 ounces of raw sweet potatoes.  This was a little more than 3 larger potatoes.  You can weigh out 24 ounces, or weigh simply weigh the 3 potatoes you choose and recalculate points accordingly.

Ingredients for Sweet Potato Salad Recipe 

24 ounces sweet potatoes (approximately 3 large)

4 slices center cut bacon, cut into small pieces

½ cup raisins

¼ cup chopped walnuts

1 teaspoon cinnamon

¼ teaspoon ground ginger

1 tablespoon granulated sugar

1 tablespoon olive oil

Directions for Sweet Potato Salad Recipe

Peel, slice, and cut sweet potatoes into ½" pieces.

Place sweet potato cubes into a stockpot with water, making sure the water is at least 1" above the potatoes

Heat over medium-high heat until boiling.  Once boiling, reduce heat to medium and continue to boil 8-10 minutes or until sweet potatoes are soft and tender.

Drain and rinse with cold water. Set aside.

In a large skillet, place bacon pieces and cook over medium heat stirring frequently.

Add cinnamon, ginger, and sugar into the skillet with bacon, and mix well.  Stir in raisins and cook for 1-2 minutes, just heating through.

Building WW FreeStyle Healthy Meals

I love using zero point foods like chicken and fish to build my meals, then adding flavor and points on the side with recipes like this one.  If you aren't sure what all is now zero points on WW FreeStyle, Sadie has a zero point foods list post explaining.  The goal of the WW FreeStyle program is to encourage you to build meals around healthy options like fish, chicken, beans, vegetables, eggs, and fruit.  To add in your daily points, a few healthy fats, whole grains, healthier carbs, and such are additions.  That makes this simple sweet potato salad recipe a perfect side to go along with your grilled chicken and steamed vegetables.
